Sticky Cacao Chia Seed Pudding

Ok, want to try a dessert that is

1. Super easy
2. Super healthy
3. Is ready to eat in 10 minutes
4. Uses 4 ingredients?

Then this is your lucky day.

My sticky cacao chia seed pudding is loaded to the brim with goodness and boasts the super food chia seed.  This cute little morsel is full of omega- 3 fatty acids and more antioxidants than blueberries (that is a lot;).  They work to promote cellular repair, maintain healthy blood pressure, and balance your blood sugar levels.

They are great news if you are watching your weight as the seeds form a gel coating when exposed to water which in turn fills you up.  They are also an easy way of increasing your daily intake of fibre and protein.  Most supermarkets sell these now in the health food section.

The pudding also includes cacao powder or just plain cocoa powder if you don’t want to be fancy schmancy about it.  I buy mine from the health food store and it is the powder from cocoa beans that have been pressed and dried with most of the fat removed.

This is how it is made

Cocao Chia Seed Pudding

Ingredients:

  1. ¼ cup raw, organic chia seeds
  2. 1 cup rice, almond or any other unsweetened milk
  3. ½ tbsp cacao powder
  4. Few spoonfuls of yoghurt
  5. Natural sweetener to taste, if desired

Directions:

+ Place the chia seeds in a bowl and put to the side.

+ Blend the milk, cacao powder, and sweetener in a blender until well mixed.

+ Keep tasting the mixture for sweetness, adding more if desired.

+ Pour in the chia seeds and mix well. Let the mixture stand for at least 10 minutes before mixing again.

+ Serve with a dollop of yoghurt through it as I have or on top……Enjoy!!

Have you tried chia seed before?  You can also use it as a sprinkle on cereals, desserts and salads…
