Quick, healthy, delicious, great for the kids and the perfect snack, edamame beans fall in between tasting like a sweet pea and a nut and a vegetable I fell in love on my first trip to Japan a long time ago (ok, I was 18) and been eating them ever since.
Edamame Beans are young soybeans originating from Japan and is served as a side dish to your meal. They are typically boiled in their pod in salted water but can also be sold (I buy mine from Asian grocers) frozen, pre-cooked and shelled. Edamame is a star legume and a great meat alternative for vegans by providing the necessary protein, vitamins and minerals. Also, apart from fish, soybeans are one of the few foods that contain omega-3 fats which help to reduce cholesterol levels. You will find it won’t take long before you feel full due to the high protein content which is great for controlling your weight. Having a bag handy in the freezer is great to bring out for a quick addition to meals (my girls love them) or for making snacks like this recipe.
