Carrot Cake Dough Bliss Balls – Healthy Snacks

If you’re anything like me, I tend to have healthy homemade snacks on rotation. Bliss balls, muffins, oat cookies, slices and healthy cakes are a great way to include vegetables in your active child’s day if they are intentionally made without trans fats, refined sugars and unprocessed. 

Now, my kids tend to get a little bored with the same snacks on offer (which isn’t the desired effect) especially with my goal to create something that brings the excitement to eating healthy snacks!

Both my girls love carrots, actually, my youngest must have been a rabbit in her past life so that’s why these carrot cake dough bliss balls having them bouncing with excitement and asking for more. 

Carrot Cake Dough Bliss Balls

Ingredients

2 large carrots
1 cup quick oats
1 cup Medjool or dried dates
2 tbsp cinnamon
1 tbsp nutmeg
1 tsp natural vanilla
½ cup sunflower seeds
¼ cup sesame seeds

How to Make

1. In a food processor, process the carrots until finely chopped. Add the dates (ensuring all seeds are removed), seeds, spices, oats and vanilla and process until combined at high speed. The mixture will tend to stick to the side of the bowl so scrape down if need be to combine more.

2. Shape the balls by using a heaped tablespoon at a time. As an option, roll in additional cinnamon or shredded coconut to finish. Place in a container and chill to firm for at least 30 minutes. Store in the fridge or freezer.
