Chocolate, Chia and Apple Pie Samosas

healthy apple pieYou know I’m all about low fuss and easy to make recipes here on Ironmum Karla, so this recipe for my healthy variation of apple pies is no exception.

This was made out of inspiration to use up some filo pastry that was in my fridge from a meat and veggie pie my husband made. It’s a perfect winters night dessert that is light and fruity. There’s no added sugar with the use of rice malt syrup and the chocolate comes in the form of raw cocao powder.

I have added in chia seeds and raw cocoa powder (I use Bioglan) but these can be optional if you wish

1 x small tin pie apples (380-400 gm) or two apples, peeled, cored and chopped

handful of sultanas

1 tps of mixed spice

Filo pastry

3 tbs rice malt syrup

1 heaped tablespoon of raw cocao powder

2 tbs stevia powder

2 tbs chia seeds

Coconut oil/ coconut oil spray

DSC003661. //  Heat oven to 200C fan forced. Place the apples, rice malt syrup, mixed spice and sultanas in a saucepan with and cook, covered, for 6 mins or until the apples are soft, and the syrup has slightly caramelised. Add in the chia seeds, cocao powder and stevia and stir until mixed through. Allow to cool

how to fold samosas2. // Cut the sheets of filo in thirds lengthways, then spray with coconut oil or lightly brush on some coconut oil (or butter if you wish).  Place a spoonful of the apple filling at the top of each strip, then fold over and over to form triangular parcels. I use two layers of filo per parcel. Place on a baking sheet, spray again and bake for 15-20 mins until crisp and golden. Serve with low-fat yogurt.
