Quite often I fall into the trap of overlooking simple ideas in favour of other extravagant finds. These apple rings are a fine example
Dried Cinnamon and Vanilla Apple Rings
Ingredients
+ 6 medium cored apples
+ 3 tbsp lemon juice
+ 2 cups water
+ 2 tsp vanilla essence (optional)
+ cinnamon to taste (optional)
+ Preheat the oven to 125 degrees in fan forced oven
+ Core the apples and slice into about 1/4 inch rings. I prefer leaving the skin on, but you can peel them if you wish.
+ In a large bowl combine the water, lemon juice and vanilla essence, and add in the apple rings in water and make sure you let the apples sit completely covered for 5 minutes (you might need to do 2 apples at a time). The lemon juice is to prevent the apples from discolouring and going brown.
+ When they have soaked for 5 minutes take them out and pat them dry using a tablecloth.
+ Arrange them on a cutting board and sprinkle on a thin layer of cinnamon. Turn them around and repeat on the other side.
So can you guess what is on my Christmas list this year? Yep, a dehydrator. As a HUGE fan of dried fruit, I reckon it would be a great investment.
