Mini Ham and Cheese Quinoa Cups

There are a couple of things blogging has re-sparked my passion for and cooking and baking is one of them.  Yep, being a blogger means you grab some great ideas flying around the net like this one I found over at Iowa Girl Eats for these yummy healthy cheesy ham quinoa cups.

They are basically the new black of the old zucchini slice where quinoa replaces the flour content so it makes them gluten-free with a protein punch thanks to the quinoa.  Of course, you can omit the ham and enjoy them as a vegetarian alternative.
 
They are super cute in size when you make them in mini muffin tins and my kids (and husband) gobbled them up not long after they came out of the oven (don’t tell them they are healthy). Here is how they are made (I also added in a carrot, see below)

Mini ham and cheese quinoa cups

 

Ingredients:

+ 2 cups cooked quinoa (about 1 cup uncooked, and cook the same as you would rice)
+ 2 eggs
+ 2 egg whites
+ 1 cup zucchini, shredded
+ 1 cup carrot, grated
+ 1 cup shredded low-fat cheddar cheese
+ 1/2 cup diced ham or bacon
+ 1/4 cup parsley, chopped
+ 2 Tablespoons parmesan cheese
+ 2 green onions, sliced
+ salt & pepper

Directions:

+ Preheat oven to 180 degrees.

+ Combine all ingredients in a large bowl and mix to combine.

+ Liberally spray a mini muffin tin with non-stick spray and spoon mixture to the top of each cup.

+ Bake for 15-20 minutes, or until the edges of the cups are golden brown.

+ Let cool for at least 5 minutes before removing from the muffin tin.

+ Enjoy any time of the day!
