Quick, Easy and Delicious Zucchini Taco Boats

Ingredients (makes 12)

1 medium zucchini, grated and sprinkled with salt and excess water drained through a colander

2 x rashers of bacon – diced (optional)

1/2 cup grated cheese

Pinch of salt

3 eggs, whisked

dash of milk

1 x packet old el paso mini taco boats

How to Make

Mix all ingredients together and pour into taco boat shells
Bake 160 degrees for approx 20 mins 
Serve to very happy kiddos ????
