Refreshing Raw Chocolate Peppermint Slice… Yummo!

It’s nice to spend time making nourishing treats your family can enjoy. Not only are you passing your love through healthful foods but the process can bring mindfulness to the foods you eat and buy.

There is nothing as good as homemade meals and snacks without added preservatives, colours, trans fats and hidden sugars. This refreshing raw chocolate peppermint slice is gluten-free, dairy-free and has minimal fructose without refined sugars. I use pure peppermint oil but I’m sure peppermint essence will give the same effect to the result.

Raw Chocolate Peppermint Slice

Ingredients

Base

1 cup walnut, pecan or almonds.

2 tbsp. melted coconut oil

¼ cup raw cacao powder

12 dates

Minty layer

2 cups natural cashews soaked overnight

2 drops pure peppermint oil or essence

2 tbsp. rice malt syrup

2 tsp super greens powder

2 tsp arrowroot

Drizzle

2 tsp coconut oil

2 tbsp. rice malt syrup

2 tbsp. raw cocoa powder

How to Make

  1. Begin by making the base. In a food processor add the nuts and process on high speed until they form a rough, flour-like consistency. Remove and set aside. Add the dates and process until they form a sticky goo. Return the nut flour back to the food processor with the dates and add the cocoa powder and coconut oil. Process until combined.
  2. In a prepared slice pan lined with parchment paper press the mixture out evenly and place in the freezer.
  3. To prepare the peppermint layer, add the soaked cashews to a food processor and process into a paste. Add the peppermint oil, rice malt syrup, greens powder and arrowroot. Process again until combined.
  4. Spoon mixture evenly on to chocolate base and place in the fridge to set while preparing the drizzle
  5. Place the coconut oil, raw cacao and rice malt in a food processor and blend to form a sauce. Pour over slice and place in the fridge for up to 2 hours. Cut in slices and store in fridge or freezer.
