If you’re looking for something a little different for an energy snack then these green superfood power bars are one of the best snacks you can get your hands on.
The green comes from the addition of spirulina, which it is often described as the most complete food source in the world and 100% natural and a highly nutritious micro salt water plant. Green algae has rich vegetable protein (3-4 times higher than fish or beef) and rich in vitamin B12 and iron. High in antioxidants, spirulina also has antimicrobial properties that destroy bacteria and viruses by boosting the body’s immune system.
On its own, spirulina can be a little hard to swallow and quite pungent, so by combining the ingredients together in these bars or smoothies makes the powder a lot easier to include in your diet.(I use Bioglan )
Green Superfood Power Bars
INGREDIENTS
1 cup dried apple slices
1/3 cup dried prunes or figs
1 cup dried dates
1/2 cup dried apricots
1/2 cup almonds
3 tbs sesame seeds
1/4 cup pepitas
1/4 cup sunflower seeds
3 tbs chia seeds
2-4 tbs spirulina powder (this can vary on your taste. Start off with 2 tbs if you’re a newbie to spirulina and work your way up)
1/4 cup rice ran sticks or oat bran
3 tbs rice malt syrup
METHOD
1. Process the apple slices, prunes or figs, dates and apricots in a processor until finely diced
2. Add the almonds, sesame seeds, pepitas, sunflower seeds and rice bran sticks or oat bran and process again until finely chopped
3. Add in the spirulina powder and give it a whizz to combine and then add in the rice malt syrup to bring everything together.
4. Press into a tray and place in the fridge to set before cutting into bars and storing in the fridge or freezer. Enjoy!
