Super Speedy Seedy Slice – No Baking Required

Who doesn’t love a good recipe you can rely on, that is quick healthy and damn delicious?!

This seedy slice recipe is simply made by throwing as many seeds as you can together, binding them with some dates and coconut oil and throwing them in the fridge. It is that simple and yet requires no baking.  The secret lies in the dry roasting of the seeds before combining. 

Originally I was making the slice with raw seeds but it lacked that crunch and nuttiness we are so used to tasting in a seed bar or slice. By dry roasting the seeds first until they are golden brown helps to release the beautiful oils and mouthwatering aroma.

A lovely snack to have on hand for the longer summer days to keep energy levels high and appetite satiated.

Super Speedy Seedy Slice

INGREDIENTS

1 cup rolled oats

½ cup sunflower seeds

½ cup pepita seeds

½ cup sesame seeds

½ cup shredded coconut

¼ cup chia seeds

½ cup dried cranberries

½ cup dates, processed

125gm coconut oil

2/3 cup rice malt syrup

 

HOW TO MAKE

 1. In a large frypan dry roast the oats and seeds and coconut. Do this on a medium heat, only enough to release some of the nuttiness without burning.

2. Place the mixture in a large bowl, mixing the dates and cranberries through so they are evenly dispensed.

3. Warm the coconut oil and rice malt syrup in a small saucepan over low heat until melted, stirring together. Pour this over the seedy mixture and stir to combine

4. Transfer the mixture to a small baking tray lined with parchment paper. Press down firmly with your hands or back of a spoon. This is important to ensure the bars will not crumble once they are set
