Let’s face it, breakfast can become a little humdrum and repetitive for us all. In fact, I bet most of you don’t even consider what you really FEEL like eating each morning..it’s just a process of habit.
I know, I know… Whatever is the easiest thing to make without too much thought is usually the go-to… BUT if you prepare this carrot cake oat soak the night before, which takes only 2 minutes by the way, then this recipe definitely falls under the ‘ easy in the morning’ category.
Oh, and did I forget to mention that you’ll also be enjoying some veggies for breakfast without too much thought 😉
Carrot Cake Oat Soak
Ingredients
1 cup quick oats
1/2 cup grated carrots
3 tablespoon maple syrup
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons raisins
1/4 cup walnuts, chopped
1 tbsp chia seeds
1/2 cup greek yoghurt
3/4 cup unsweetened nut or rice milk
How to Make
- Combine all ingredients into a bowl and mix together until combined. Transfer to separate mugs if desired
- Cover and store in refrigerator overnight
- Wake up and look forward to enjoying your oats!
