Do you find yourself scratching your heads each morning with what to pack in your kid’s school lunchbox?
It’s easy to throw in a processed store-bought snack but what about something that resembles being healthy… Towards the end of a busy week, it’s common to be caught short which is why I like to make these simple sugar free wholemeal pikelets amongst others to fill the snack void.
These sugar-free wholemeal pikelets take no time at all to make, actually, I would say less time than it would take to go to the shop and buy something half as nutritious. You can also add blueberries for extra flavour
Sugar-free Wholemeal Pikelets
Ingredients
1 cup wholemeal S.R. flour
1 tsp cinnamon
2 tbs stevia powder
1/3 cup plain yoghurt
1/4 cup milk
1 egg, lightly beaten
1/2 cup blueberries (optional)
How to make
+ Mix the dry ingredients together (flour, cinnamon, stevia) and the wet (yoghurt, milk) and gradually stir in egg.
+ Add wet ingredients to dry ingredients plus optional blueberries and stir well
+ Heat a non-stick fry pan, spraying with a small amount of olive oil on low heat and then pour small amounts turning once they begin to form small bubbles.
+ Freeze separately or store in the fridge.
