This fruity kiwi banana bread recipe is a low fat, power-packed ‘bread’ that is unlike the other unhealthy banana bread (cakes) out there. Yoghurt replaces butter and rice malt syrup reduces the fructose content
Kiwi Fruit Banana Bread
Ingredients – makes one cake loaf
- 2 1/2 cups wholemeal self-raising flour
- 1 tsp cinnamon
- 1/3 brown sugar (or 2/3 cup if you don’t have rice malt syrup)
- 1/3 cup rice malt syrup
- 1/2 cup shredded coconut
- 2 eggs
- 3 tbs plain Greek yoghurt
- 1 tsp vanilla
- 2 ripe bananas
- 3 kiwi fruit, peeled
Method
1 Preheat the oven to 160-degree fan-forced oven. Spray a 21cm x 10cm loaf tin with olive oil spray.
2 In a large bowl sift together the flour and cinnamon then add the coconut and sugar and rice malt syrup. In a separate bowl whisk the eggs, yoghurt and vanilla.
3 In a food processor add the banana and 2 kiwi fruit and blend until smooth. Add the fruit and egg mixture to the flour ingredients and mix to just combine.
4 Pour the batter into the prepared loaf tin and top the batter with the remaining kiwi fruit, sliced.
5 Bake for 45 mins and test with a skewer so it comes out clean or springs back when touched. Leave to cool in the tin and then place on a wire rack to complete the process.
6 Serve as is or place under a grill to toast up for breakfast! Perfect for the active family!!
Green and gold in colour, kiwifruit is a great stand-alone snack and a great tip is to place them in an eggcup with the tops off to add novelty for kids.
