Fast and Fresh Dinner – Healthy Spring Rolls

Healthy, fast and fresh, these spring rolls are a firm favourite and I’m sure once you give these a go for yourself you’ll know why.

Traditional Chinese spring rolls are deep-fried but with just a little olive oil (or your place in the oven) you can create something that is a complete meal with protein, vegetables and carbohydrates all wrapped into one.
 
Spring roll wrappers are low in fat and found in the freezer section at the supermarket near the pastries.
 
 

Healthy Spring Rolls

Ingredients

 
+ 1 packet spring roll pastry
+ 500gm 5 star beef mince (or turkey, chicken, kangaroo)
+ 1 packet rainbow salad mix or make your own using broccoli stems, carrot and beetroot strips
+ 1 tsp Chinese five spice powder
+ 3 tbs soy sauce
 
Method
 

Step 1 – Remove spring roll wrappers from the freezer and allow to defrost.

Step 2 – Brown mince and sizzle off the excess fat.

Step 3 – Add five spice powder, soy sauce and vegetables to mince and cook for a few minutes until vegetables have softened slightly.

Step 4 – Allow the mince to cool while you are separating the spring roll wrappers. It is a good idea to keep a clean moist tea towel on top of the wrappers to stop them from drying out.

Step 5 – With a spring roll wrapper corner facing you, scoop a couple of tablespoons of filling across the paper, leaving enough room for the sides to be folded in. Fold the side corners in and roll it up into a log and form as tightly as you can.

Step 6 – Heat a little olive oil in a non-stick frypan over medium heat and gently brown each side until golden and crunchy. Serve with sweet chilli sauce.
