If you are a frequent visitor here you will know I love a quick family meal that I can prepare and pop in the oven or slow cooker and be ready in time for dinner. My Chilli Con Carne has proven to be a hit and this Healthy Minced Beef Wellington is another family favourite.
Made with lean beef mince and heaps of veggies it is a nice way to serve a meal that is all in one without any further additions. You can use a store-bought pastry or make your own dependent on time and effort!
Healthy Beef Mince Wellington
Healthy Beef Mince Wellington
A super simple all in one meal that will please the whole family
Cost: $9
Ingredients
- 500 gram lean 5 star beef mince
- 2 large sweet or plain potato grated or finely chopped
- 400 gram fresh or frozen mixed vegetables, finely grated or chopped carrots, brocolli, pumpkin, peas etc
- 1 whole onion diced
- 3 tsp minced garlic
- 2 sheets puff pastry
- 1 whole egg beaten
- fresh rosemary to taste finely chopped
Instructions
- Pre heat oven to 180 degrees.
- Peel and chop/grate the onion and vegetables (if necessary) and potato
- Place all vegetables and rosemary into a frying pan with olive oil. Fry and stir for about 8 minutes or until vegetables soften and colour
- Put vegetables into large bowl to cool completely
- Add the minced beef to the bowl with further seasoning if desired and the egg. Scrunch together
- Thaw and roll out pastry. With this recipe it will create 1 large wellington loaf. To do this, lay two sheets lengthways and slightly press to join or roll to create one large double length sheet
- Place mince mix along one long side, in a sausage shape
- Brush edges of the pastry with egg and roll pastry to cover mince completely. Squeeze ends together. It should resemble one large "loaf"
- Put onto a baking tray, brush with remaining egg. Bake for an hour until golden. Slice and serve with gravy if desired
