Personally, I have always had a dislike to chocolate crackles. I think it has something to do with the copha that is usually used..the smell, the taste the texture, it just doesn’t do it for me.
I came across this recipe here, so I thought it was worth a try. I have always felt a little guilty about my girls not having experienced chocolate crackles at home, simply because I can’t deal with the copha smell! This one uses pure organic coconut oil so it is much more pleasant and doesn’t contain the nasty hydrogenated copha.
Notice how I call these ‘healthier’ because they are not classified as an ‘everyday’ food but if you were making them for your kiddies party then this is a preferred recipe.
Healthier Chocolate Crackles
Ingredients
+ 2 cups organic brown rice puffs (find them in the health food aisle of your supermarket)
+ 1/2 cup o desiccated coconut
+ 1/2 cup brown sugar
+ 2-3 tablespoons of organic raw cacao
+ 125g virgin, organic coconut oil
+ Spoon your coconut oil, sugar, cocoa and coconut in a saucepan and warm gently to melt,+ Throw in your brown rice puffs and combine gently, Pour the cacao sauce mix over the rice puffs in a bowl and combine thoroughly with a large spoon.
+ Put 12 paper patty cases into a muffin tin
+ Carefully spoon the mixture into each one, making sure you mix it as you go so that it is evenly mixed throughout
+ Pop them into the fridge and wait until they go hard
