Cauliflower Fried Rice with Chia Seeds


1 medium-sized head of cauliflower

2 beaten free-range eggs

2 large carrots, cubed

1 cup frozen peas

½ cup frozen corn

1 garlic cloves, minced

1 tsp ginger, minced

3 tablespoons tamari sauce

½ cup chopped shallots

2 tbs chia seeds

2 tbs sesame seeds

How to make

  1. Process cauliflower in a food processor (or grater but this will take more work), the end product should resemble smallish grains of rice.
  2. Heat a non-stick fry pan over medium low heat. Add the eggs and fry until cooked – roughly chop and place aside.
  3. Add the carrots, peas, corn, garlic and ginger and stir fry for about 5 minutes. Add the cauliflower, and stir fry quickly to cook through
  4. Stir in the tamari and green onions, chia and sesame seeds just before serving.
