Great things come in small packages, right? Well, these scrumptious diddlyumptious mini turkey popovers cross pot pies are no exception. If your kids are like mine they are attracted to any food that’s mini, baby-sized and scaled-down. It makes them feel special like it’s a ‘just for me’ kinda meal.
These little ‘pot pies’ as I like to call them are quick and easy, nutritious without the hassle of pre-cooking or browning. The recipe, in its entirety, is baked in the oven. Feel free to add whatever veggies are in the fridge or garden. When served with a side salad, this makes for an easy dinner idea.

Mini Turkey Popovers

Ingredients
- 150 gm plain flour
- 1 whole egg
- 250 milk
- 100 ml water
- 500 gm turkey mince
- 150 gm celery finely diced
- 100 gm rolled oats
- 3 tbsp Worcestershire sauce
Instructions
- Preheat oven to 180 degrees. Brush deep pattie tins with very little oil
- Place the flour in a bowl and make a well in the centre. Add the egg and milk and gradually beat in the flour. Gradually add the water, beating until smooth and bubbly
- Place the minced pork, celery, oats, sauce in a bowl and mix thoroughly. Mould the mixture into small balls and place in the patty tins. The balls should allow
enough room in the tin for the batter to be poured around. But don't pour batter yet! - Cook for 10 minutes, remove from the oven and quickly pour the batter into the tins, over the patties. Cook for a further 20- 25 minutes, or until well risen and golden brown.
