Grilled Fish Tacos With Lime Greek Yoghurt

If you’re after a healthy take on a quick 15-minute meal, then taco’s are your answer.

I love fish tacos as they remind me of being on holidays in Maui eating fresh local seafood after a big day on the water. So light and refreshing!

Fish tacos: with a slaw made with crunchy vegetables and broccoli, all topped with a mayonnaise-free fresh lime yoghurt sauce.

Grilled Fish Tacos With Lime Greek Yoghurt

Serves 4

Ingredients

      + 1 bag of prepared coleslaw or 250gm shredded green and purple cabbage and grated carrot

      + Handful of chopped fresh parsley

      + Handful of chopped fresh coriander

      + Fresh lime juice, 1 tablespoon plus 2 1/2 teaspoons ¼ cup plain greek-style yoghurt

      + 400gm of your favourite fish, something that does break up easily

      + Ground cumin, 1/4 teaspoon

      + Olive oil, 2 tablespoons

      + Large avocado, 1, peeled and sliced

      + 1 packet corn tortillas, heated

 

How to Make

Step 1 – In a large bowl, combine the vegetable slaw, parsley, coriander plus one tablespoon plus one teaspoon of the lime juice. Toss to combine. Let the slaw stand while preparing the sauce and fish.

Step 2 – In a small bowl, mix together the yoghurt, remaining lime juice and ground cumin.

Step 3 – In a large frying pan over medium-high heat, warm the oil and then add the fish and sauté until browned

Step 4 – Place slaw, chopped avocado, warmed tortillas, slightly dissembled cooked fish fillets and yoghurt sauce on the table and have fun assembling yourself

Serve immediately but eat mindfully 😉
