Healthy Fruity Pork Fillets – Dinner Done Differently

You’ll laugh when you see this old pic but it is a good reason I’m showing this….it all has to do with the recipe that accompanies it.  Yes, that’s right, moving on from the photo that was taken when I was about 17 years old (only 10 years ago or so;) which was published in an athlete cookbook (very low budget might I add).
 
 
We don’t eat a lot of pork in our family so it was only recently that I came across some lovely pork fillets and remembered this recipe.  I had forgotten how good it was, and with thanks to my mother it has now been passed down and recreated now into one of my family’s favourite meals.



Here’s how to make these deliciously moist fruity pork fillet parcels

Fruity Pork Fillets

Ingredients

2 large pork fillets, traces of fat removed

1 cup pitted prunes

2 apples, chopped

1/2 cup light cream cheese

1 cup apple cider

1 tablespoon honey

How to make

+ Cut a deep pocket in the side of each pork fillet with a sharp knife.

+ In the cavity layer knobs cream cheese, prunes and apples

+ Tie string around the fillets to keep the opening closed and pulled together

+ Baste 1 cup of the apple cider mixed with one tablespoon of melted honey

+ Bake in a moderate oven for about 30 mins covered then remove foil and bake another 30 mins uncovered

+ Slice the pork and serve with steamed vegetables and carbs
