Easy Peasy Gluten Free Zucchini Slice

I thought I would start with an easy recipe for my first blog cook-off. I usually don’t follow recipes very well and always adapt them to have more veggies. less butter, less sugar etc so they are healthy. So, just to get me into the groove of things, here is a family favourite that Aunty Amanda passed on that is great for snacks or lunches. (My 1-year-old thinks this is pretty good and it is the only way I can get eggs into my 4 years old).

This gluten-free, healthy zucchini slice is so simple, with most of the prep all in the chopping.

GLUTEN FREE ZUCCHINI SLICE

Ingredients
5 eggs
1 cup gluten-free self-raising flour
375 gm zucchini, grated
1 large onion, diced finely
200gm rindless free range bacon, chopped 
1 cup grated cheddar cheese
1/4 cup olive oil

Method
1. Preheat oven to 170 degrees. Grease and line a 30cm x 20cm lamington pan

2. Beat the eggs in a large bowl until combined.

3. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine.

 
4. Pour into the prepared pan and bake in the oven for 30 minutes, or until cooked through

After it has cooled, cut up into slices and store it in the fridge. So there you have it, quick easy, healthy (in moderation) and yummy!

If your a vegan, just leave out the bacon.

I have since made this a few times and adapted it to be healthy  (as I do) so that it has 1 cob of corn, 1 x grated carrot.
