My raw chocolate slice obsession has been taken to a new level after making this slightly more decadent version. This chocolate fudge slice has the addition of a smooth chocolaty layer that covers a nut base.
Still, a healthier choice than regular chocolate, the ingredient which gives the chocolate flavour, raw cacao powder, is packed with nutrients, magnesium, iron, antioxidants and polyphenols to help support your health every day. It’s the perfect way to indulge in something chocolaty without the hidden sugars and trans fats.
Coconut oil which is a bit of a health food superhero binds all the ingredients together but be sure to keep this slice in the fridge or over summer it will be melting before your eyes.
Raw Chocolate Fudge Slice
+ 3/4 cup of macadamia nuts
+ 3/4 cup of almonds or a nut of your choice
+ 1 cup fresh or dried dates, pitted
+ 2 tbs coconut oil, melted
+ 1 tsp vanilla
+ 2/3 cup raw cacao powder
+ 2/3 cup coconut oil
+ 1/4 cup rice malt syrup
+ 1/4 cup maple syrup
1 In a food processor or thermomix, combine the base ingredients until crumb-like and press into a lined baking tray. Place in the fridge while you are preparing the topping
2 In a saucepan, stir all the topping ingredients over low heat. Stirring until melted but not allowing it to boil.
3 Over the crumb base, pour the chocolate topping evenly to form a layer of chocolate. Place and store in fridge or freezer to set.
4 Try not to eat all at once. Portion control people! 😉
