What started as a pie in the sky idea.. “Imagine if.. “ is becoming a reality tomorrow when I don the @surfersparadiseslsc gold star cap and join my gem of a friend @courtney_hancock_ and the surfers team at the @summer_ofsurf Shaw and Partners event at Northcliffe. 

Being able to compete alongside Court in a team event, is still such a wild idea but at the same time a special moment for us both (and my girls think it’s pretty cool too 🧜🏼‍♀️🧚🏼) - regardless of the result 😅 Here goes nothing! #doitbecauseyoucan  #noregrets

    When your after a low fuss family meal ( that does When your after a low fuss family meal ( that doesn’t compromise nutrition) it’s Chilli Con Carne to the rescue ⛑. I popped this in the slow cooker between school pickup and Nipper training ( I love coming home to the aroma) but it is just as easy to make on the stove top! Here’s how to make it!

1. On a high heat, brown off 500 gm lean beef mince, 1 tbs minced garlic and 1 diced onion
2. Grate 1 large carrot, 1 large zucchini, 1/2 cup cauliflower, bit of sweet potato - whatever you have in the fridge
3. Open and rinse 1 can kidney beans
4. Place cooked mince mixture, veggies, beans, 1 tin diced tomato, 1 sachet taco seasoning and extra half tin water in a slow cooker or stove top pot and simmer stirring occasionally for 20 mins until nice and tender. Serve with corn chips or pita crisps.

Enjoy! Also served to the lucky kids @koolkidsearlylearning right across the coast 👍🏻

    Sometimes even the best nutrition doesn’t cut it Sometimes even the best nutrition doesn’t cut it when you are severely iron deficient.  Suffering dysmenorrhea for quite a few years now, the ‘iron’ was certainly taken from the ‘ woman’ 🤣 I’m now looking forward to feeling better with iron infusions spaced 2 weeks apart. 3 down 1 to go ! 🎉
