The humble kiwi fruit has a lot of weight on its shoulders in regards to what it can deliver nutritionally.  I know if I’m feeling a little tickle in my throat then a kiwi fruit is the first thing I grab to up my chances of fending off the virus due to its high vitamin C and antioxidant powers (1 kiwi fruit a day gives you your daily vitamin C allowance and double that of an orange)

If my digestion is feeling a little sluggish then again, a kiwifruit is the perfect natural ‘pill’ to help with all things intestinal.  This is due to actinidin which is an enzyme known for its ability to break down proteins, promoting increased digestion.

A hard workout can be supported by tucking into kiwifruit to resupply your potassium levels and it is also a great source of folate for pregnant mums to be.

Is it no wonder that the kiwi fruit easily falls into the ‘superfoods‘ class

This fruity kiwi banana bread recipe is a low fat, power-packed ‘bread’ that is unlike the other unhealthy banana bread (cakes) out there. Yoghurt replaces butter and rice malt syrup reduces the fructose content

Ingredients – makes one cake loaf

  • 2 1/2 cups wholemeal self-raising flour
  • 1 tsp cinnamon
  • 1/3 brown sugar (or 2/3 cup if you don’t have rice malt syrup)
  • 1/3 cup rice malt syrup
  • 1/2 cup shredded coconut
  • 2 eggs
  • 3 tbs plain Greek yoghurt
  • 1 tsp vanilla
  • 2 ripe bananas
  • 3 kiwi fruit, peeled

1  Preheat the oven to 160-degree fan-forced oven. Spray a 21cm x 10cm loaf tin with olive oil spray.

2  In a large bowl sift together the flour and cinnamon then add the coconut and sugar and rice malt syrup.  In a separate bowl whisk the eggs, yoghurt and vanilla.

3  In a food processor add the banana and 2 kiwi fruit and blend until smooth.  Add the fruit and egg mixture to the flour ingredients and mix to just combine.

4 Pour the batter into the prepared loaf tin and top the batter with the remaining kiwi fruit, sliced.

5 Bake for 45 mins and test with a skewer so it comes out clean or springs back when touched. Leave to cool in the tin and then place on a wire rack to complete the process.

6 Serve as is or place under a grill to toast up for breakfast! Perfect for the active family!!

Green and gold in colour, kiwifruit is a great stand-alone snack and a great tip is to place them in an eggcup with the tops off to add novelty for kids.

* If you suffer from peanut allergies, sometimes kiwi fruit can also be a problem.

    Hi Karla – made this yesterday afternoon with more banana and only 1 kiwi fruit… noticed that the recipe instructions refer to milk (step 2) but no milk in ingredients?
