Let’s face it, breakfast can become a little hum drum and repetitive for us all. In fact, I bet most of you don’t even consider what you really FEEL like eating each morning..it’s just a process of habit.
I know, I know… Whatever is the easiest thing to make without too much thought is the usually to go. BUT if you prepare this carrot cake oat soak the night before, which takes only 2 minutes by the way, then this recipe definitely falls under the ‘ easy in the morning’ category.
Oh, and did I forget to mention that you’ll also be enjoying some veggies for breakfast without too much thought 😉
Carrot Cake Oat Soak
1 cup quick oats
1/2 cup grated carrots
3 tablespoon maple syrup
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons raisins
1/4 cup walnuts, chopped
1 tbsp chia seeds
1/2 cup greek yoghurt
3/4 cup unsweetened nut or rice milk
How to Make
- Combine all ingredients into a bowl and mix together until combined. Transfer to separate mugs if desired
- Cover and store in refrigerator overnight
- Wake up and look forward to enjoying your oats!
