So, I’ve tried a few so called healthy banana bread recipes in my time. Of course anything resembling a sugary cake I tend to avoid which is why I love this recipe so much!
My family ask for it time and time again which for me is a nice feeling that in portionable sizes, makes for a great school snack.

Anyhoo, I know you are super keen to try the recipe for yourself so here it is!
Best Yet and Healthy Banana Bread!
½ cup of coconut sugar
60gm butter softened
2 large free-range eggs
3 large ripe bananas, mashed
½ cup greek yoghurt
2 cups self-raising flour
How to make
Pre-heat oven to 180 °C
Add the butter and sugar to a bowl and beat together with an electric mixer until smooth and creamy.
Next, add the eggs and beat well, then add the mashed banana. Beat only enough to combine.
Add the flour and yoghurt and stir to form a thick cake batter.
In a prepared greased cake loaf tin, bake for approx. 50 mins. Test with a skewer to ensure it comes out clean. Allow cooling before turning onto a wire rack. Serve in generous slices.
