Crunchy Sweet Potato Spirals

Do you get over the same old vegetables served the same old way?

Yep, me too.  We all do.  Which leads to lack of excitement and motivation to even want to cook and bake healthy in the first place.

The trick is to keep reinventing the wheel. Keep tricking things up so you don’t get bogged down with the same unappealing meals (and same nutrients).

Spiralising is your low carb/gluten free answer to pastas, and stodgy meals and is done using a spiral vegetable slicer.  Not only can you make yummy meals such as my healthy unfried pad thai
but this super yummy side dish or snack.

Crunchy Sweet Potato Spirals

INGREDIENTS

+ 2 medium sweet potato’s, spiralised

+ coconut oil spray or coconut oil

HOW TO MAKE

There are two ways you can choose to make these. If you have the time I recommend option 1.

OPTION 1

1// Toss the sweet potato in enough coconut oil to coat in a bowl. Spray a large baking tray with coconut oil.

2// Spread the spirals on the tray and bake for approx. 20 minutes at 160 °until crunchy but not burning (be careful there is a fine line!)

OPTION 2 (in photos)

1// Spray a large non stick frypan on high heat with coconut oil spray

2// Place the sweet potato evenly in the pan and then spray the top of the sweet potato with coconut spray

3// Wait for one side to ‘crunch up’ and then flip with a spatula to repeat on the other side.

4// Allow to cool on a paper towel 

5// Serve with fresh mayo as a side dish or as a snack
