Who finds themselves scratching their heads each morning with what to pack in their kids school lunchbox? And I’m talking something that resembles being healthy…I know I do if I’ve had a busy week and caught short which is why I like to make these simple sugar free wholemeal pikelets amongst others to fill the snack void.
They take no time at all to make, actually, I would say less time than it would take to go to the shop and buy something half as nutritious. You can also add blueberries for extra flavour
Sugar free wholemeal pikelets
1 cup wholemeal S.R. flour
1 tsp cinnamon
2 tbs stevia powder
1/3 cup plain yoghurt
1/4 cup milk
1 egg, lightly beaten
1/2 cup blueberries (optional)
+ Mix the dry ingredients together (flour, cinnamon, stevia) and the wet (yoghurt, milk) and gradually stir in egg.
+ Add wet ingredients to dry ingredients plus optional blueberries and stir well
+ Heat fry pan on low heat and pour small amounts turning once they begin to form small bubbles.
+ Freeze separately or store in fridge.
