Healthy coconut chia seed rice pudding

There is something about a warm rice pudding that reminds me of my childhood.  I don’t even know if I was a huge eater of it, but I do remember my mother always stirring up a big pot for my brother.

Being active kids, this was a perfect way to get some good carbohdrates into us and refuel for the next day.  There are a lot of  ’empty’ desserts out there but rice puddings, prepared healthily can be a perfect way to up the energy intake and fill hungry tummys.  Using brown rice rather than white adds wholegrains and fibre while the chia seeds add essential omega 3’s to this dish.

My version is super simple (like anything I make) and doesn’t require endless hours standing at the stove stirring milk so it doesn’t burn.  10 minutes max and your done.

Healthy chia seed rice pudding

*Serves 4

Ingredients

+  2 cups cooked brown rice
+  2 1/2 cups low fat milk or almond milk
+  1/3 cup chia seeds
+  2 tbs  maple syrup
+  1 1/2 tsp vanilla extract
+  1/3 cup shredded coconut
+  1/4 cup sultanas
+  1 tsp cinnamon
+  1/2 tsp  nutmeg

How to make

1.  Combine milk and rice in medium stove top pan. Simmer on low until milk starts to warm then keep stirring for 5 minutes on a low heat to infuse the milk into the rice.

2.  Add sultanas, coconut, spices, maple syrup and vanilla extract.

3.  Remove from heat and allow to sit for about 10 minutes, until rice, sultanas absorbs flavors.

4.  Add chia seeds and stir to combine.

5.  Transfer to a large bowl and refrigerate for 4 hours until pudding sets.*

*If the pudding does dry out a little just add a little milk before serving

Serve with greek yoghurt and a little drizzle of agave syrup.
