There is something about a warm rice pudding that reminds me of my childhood. I don’t even know if I was a huge eater of it, but I do remember my mother always stirring up a big pot for my brother.
My version is super simple (like anything I make) and doesn’t require endless hours standing at the stove stirring milk so it doesn’t burn. 10 minutes max and your done.
Healthy chia seed rice pudding
+ 2 cups cooked brown rice
+ 2 1/2 cups low fat milk or almond milk
+ 1/3 cup chia seeds
+ 2 tbs maple syrup
+ 1 1/2 tsp vanilla extract
+ 1/3 cup shredded coconut
+ 1/4 cup sultanas
+ 1 tsp cinnamon
+ 1/2 tsp nutmeg
How to make
2. Add sultanas, coconut, spices, maple syrup and vanilla extract.
3. Remove from heat and allow to sit for about 10 minutes, until rice, sultanas absorbs flavors.
4. Add chia seeds and stir to combine.
5. Transfer to a large bowl and refrigerate for 4 hours until pudding sets.*
*If the pudding does dry out a little just add a little milk before serving
Serve with greek yoghurt and a little drizzle of agave syrup.
