This post comes to you from the simple files, yep it’s the simple things that make me happy and one of the things making me happy at the moment is picking our lovely overlarge cucumbers from the garden and making cucumber ‘sandwiches‘.
Regular sandwiches with a filling slapped in between two pieces of bread is not really my thing. I prefer light lunches of rice cakes, nori rolls or salads, they just make me feel better throughout the afternoon.
+ Take one large cucumber and slice into 1/4 inch thick slices, dab with a paper towel to remove excess moisture. Keep the skin on as it helps maintain the shape.
+ With the filling of your choice carefully arrange on top. I love using avocado, chicken breast, tuna, tomato, sweet chilli, chia seeds (not all at once)
+ Enjoy while fresh for a lovely crispy bite.
