Regular sandwiches with a filling slapped in between two pieces of bread is not really my thing. I prefer light lunches of rice cakes, nori rolls or salads, they just make me feel better throughout the afternoon.
This is how to make simple cucumber mini sandwiches
+ Take one large cucumber and slice into 1/4 inch thick slices, dab with a paper towel to remove excess moisture. Keep the skin on as it helps maintain the shape.
+ With the filling of your choice carefully arrange on top. I love using avocado, chicken breast, tuna, tomato, sweet chilli, chia seeds (not all at once)
+ Enjoy while fresh for a lovely crispy bite.
