The healthy meat pie to cheer on the Aussie’s…

I have a super simple dinner you can prepare which is perfect for sitting down and cheering on the Aussie’s (or your own country) with.  It is based on the turkish meat pie, but of course a healthy version that the whole family will enjoy.  I have also added in vege’s so it really is a complete meal in one.
This is how it is done, (makes four individual pies)

Ingredients

2 tsp olive oil
1 large onion, finely chopped
500gm lean beef or kangaroo mince
1 to 2 cups of finely processed veges (carrots, corn. peas, broccoli..)
1/2 bunch flat leaf parsley, chopped
3 eggs at room temperature (or four egg whites)
300ml of low fat ricotta cheese
12 sheets of filo pastry
60gm feta (optional)

Method

+ Pre heat your oven to 180 degrees of 160 fan. Line a baking tray with baking paper

+ Heat oil in large fry pan and brown onion. Add mince and cook for another 5 minutes, making sure you break it down with a spoon. Stir in vegetables and parsley ( I also added a bit of worcestershire sauce here) and set aside in a colander to drain for 5 minutes.

+ Meanwhile whisk your eggs and ricotta in a bowl.  Lay 2 sheets of filo pastry on your bench with long edge facing you.  Spread over 2 tbsp cream mixture and roll up lightly to form a long roll with edges open.  Carefully twist roll into a coil and and place on tray.  Repeat until you have made four.

+ Pour remaining cream mixture over the top of pastry coils, Scatter over feta and bake for 40-45 minutes, until golden brown.  Remove from oven and let sit for 10 minutes as they get damn hot!
